When it comes to food, I’m more of a grazer. In fact, I graze so much throughout the day that sometimes I forget to make an actual meal and it drives my husband crazy! He’s definitely not a grazer when it comes to food. But this Garden Veggie Rice Salad is the perfect mix between my grazing habits and having a meal made for my husband! You can eat it hot or cold and it’s absolutely delicious.
I’ve always been a big fan of fresh, fast, and fabulous salads! Salads that are not only healthy and delicious but also leave you feeling full and satisfied afterwards. This Garden Veggie Rice Salad is exactly that! I love how fast it is to put together and the only amount of cooking you have to do is to cook the rice. Try it out, I’m sure you won’t be disappointed!

Garden Veggie Rice Salad
Ingredients
- 4 C. Long Grain Rice
- 1 medium carrot, chopped
- 1 medium celery stalk, chopped
- ยฝ medium green pepper, chopped
- ยผ C. orange and yellow mini sweet peppers, chopped
- 1 medium tomato, chopped
- 1 C. broccoli, chopped
- 5 mushrooms
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 tsp. garlic powder
- ยฝ tsp. onion powder
- ยผ C. olive oil
- 2 tbsp. red wine vinegar
Instructions
- Cook rice according to directions to get 4 cups cooked. Chop ingredients approximately the same size. Combine all ingredients into a large bowl while rice is hot. Serve warm or cold.
