Snickerdoodle cookies used to be a staple in our house as my kids were growing up! We enjoyed making them together and then eating them as a family. Yummy!! One of my favorite things to do with my kids is to find new recipes and make them together. Not only does this help them learn how to cook but it’s so fun and delicious (most of the time)! These Snickerdoodle Cookie Bars are a delightful twist on the regular snickerdoodle cookie recipe. You just might find that you like these even more!

Snickerdoodle Cookie Bars

Cook Time 1 hour 30 minutes
Total Time 1 hour 35 minutes
Servings 15 bars

Ingredients

Cookie Ingredients

  • 2 ⅓ c. flour
  • 1 ¼ tsp. baking powder
  • ½ tsp. salt
  • ¾ c. unsalted sweet cream butter softened
  • 1 c. sugar
  • ¾ c. brown sugar packed
  • 3 large eggs room temperature
  • 1 tsp. vanilla extract
  • 1 c. milk chocolate chips
  • 1 c. white chocolate chips

Cinnamon Frosting

  • 2 c. powder sugar
  • 1 tsp. vanilla
  • 1 tbsp. cinnamon
  • 4-6 tbsp. heavy whipping cream
  • 1 c. unsalted sweet cream butter softened
  • ½ c. mini chocolate chips

Topping

  • 1 c. sugar
  • ¼ c. ground cinnamon

Instructions

Cookie Instructions

  1. Preheat the oven to 350 degrees.

  2. Use a 9 x 13 baking pan. Tear a large piece of parchment paper and place it into the pan, set aside.

  3. In a large bowl whisk together the flour, baking powder, and salt, set aside.

  4. Using a stand mixer, beat the butter and the sugars until light and fluffy.

  5. Mix in the eggs and vanilla, beating on low speed until incorporated.

  6. Stir in the dry ingredients on low speed until just combined. Mix in the chocolate chips. 

  7. Spread the batter into the baking dish.

  8. In a small bowl, mix the cinnamon and sugar. Sprinkle the cinnamon-sugar mixture over the batter.

  9. Bake for 25 minutes. Cool on a wire rack for 1 hour before frosting.

Frosting Instructions

  1. Using a standing mixer, combine the butter, powder sugar, vanilla, cinnamon, and heavy whipping cream. Cream together until stiff and fluffy.

  2. Scoop the frosting onto the cookie bars and even spread with a flat spatula or knife.

  3. Sprinkle the mini chocolate chips onto the frosting.

  4. Let sit for 10 minutes before cutting and enjoying!

I know that this looks like a lot of steps and a lot of ingredients but it’s quite simple to put together and you probably have all of these ingredients in your pantry right now!

      Hi Toni!
      I started making this recipe and noticed it doesn’t state what size pan to use. The frosting ingredients doesn’t contain butter, but the frosting directions say to combine butter, powdered sugar, vanilla, cinnamon and heavy whipping cream. How much butter?

        I’m so glad you are making this. Sorry to reply so late. The ingredients list does state butter: ¾ c. unsalted sweet cream butter softened
        We will add the pan size to the post – 9×13 baking dish.

          The recipe states butter for the cookies only but doesn’t list the amount of butter required for the frosting. I too started making this recipe but am unsure how much butter is required for the frosting.
