Spring salad? We got you covered! This delicious apple pear spring salad will definitely bring joy to your day! Since Mother’s Day and Teacher Appreciation is just around the corner, this would be a lovely dish to provide to those you love and care about.
The salad is fresh, healthy, and tastes absolutely delicious! It’s very simple but actually has lots of elements you will love!
My favorite is the cashew! It gives the salad some nice crunch. The poppy seed dressing is yummy and are also a great addition to this beautiful spring salad!
INGREDIENTS
Dressing:
½ c. sugar
⅓ c. lemon juice
½ c. red onion, finely chopped
2 T. dijon mustard or brown mustard
⅔ c. olive oil
1 T. poppy seeds
Salad:
2 (5 oz.) bags of Spring Mix Salad
4 oz. mozzarella cheese, shredded
1 c. cashews, whole or halves
1 crisp red apple, diced
1 crisp pear, diced
DIRECTIONS:
Combine all dressing ingredients in a bowl or jar; mix and set aside.
Combine salad ingredients together in a large bowl.
Right before serving, pour dressing over salad and toss, coating the lettuce evenly. Serve and enjoy!
