I’m so excited to be here today, to share a Christmas-y cookie concoction that your family and your kids are going to love. You will too. I promise. Funfetti Cookie Sandwiches with Marshmallow Cream!
Enter my daughters’ school book sale. They tout it as some awesome school event. Really, it’s a Barnes and Noble held inside the school library.
But whatever.
Families are asked to donate cookies. They figure more kids will come buy books if they are lured with sugar.

I’ve found at these things that totally outlandish desserts like I usually make (Cookies ‘n Cream Magic Bars, anyone?) don’t go over well with kids. They prefer things that sparkle and are doused with frosting.I was happy to oblige.
These cookies are easy-peasy. They start with cake mix. Anything is better with cake mix!I added some butter emulsion (like a thick extract) to the batter, to pump up the Funfetti-ness of these cookies. If you don’t have butter extract, don’t worry. They are cake batter enough with just the cake mix.
Then I made marshmallow cream frosting for the filling. Can you say sugar overload?
{Awesome sugar overload, I should clarify. Totally rad, people!}They were the first cookies to disappear at the book fair. I wasn’t surprised, though. Kids and adults are all addicted to sprinkles. They’re like a sugar magnet.
