    Hot Chocolate ‘Cup’ Cakes

    Hot Chocolate "Cup"cakes - Christmas Wonderful Series

    Hi everyone! I’m Jen from the blog Sweeten Your Day, and I am so excited to be part of Design Dazzle’s Christmas Wonderful series! Today I want to share a special holiday treat.

    Nothing quite warms you up in the cold winter months like a nice hot cup of cocoa! It is one of those things that you can have year round but it just isn’t the same without snow and Christmas music. I am going to show you one way that our family likes to enjoy this treat that is super easy, fast and fun…
    .
    Here is what you will need –
    1 box of your favorite brownie mix (I used a Pillsbury Chocolate Fudge mix)
    water, oil, large eggs (the amount the recipe calls for on the box)
    1 additional egg (the extra egg gives the brownie a more cake like texture)
    Dark Chocolate in large chunks (I used Dove Dark Chocolate Promises because they have a nice creamy texture when melted)
    6-8 microwave safe cups and saucers
    prepared Creamy Marshmallow Frosting (recipe below)

    Here’s what you do –
    Prepare your batter as directed on the box, adding one additional egg.
     Scoop batter into each mug, filling it about ½ way full. Also you don’t need to worry about greasing the inside of the mugs since you will be eating them right out cup.
    Next stack 2 dark chocolate chunks together and press them into the center of the batter in each mug.
    Take a little knife or fork and spread some of the batter over the top to cover the chocolates.
    Place the filled cup on a saucer and in the microwave. Now are you ready for the best part… cook on full power for 1 minute!
    That is how long they take to cook in my microwave, but each microwave can vary so you may need to experiment with the exact cooking time, then proceed from there.
    You can cook up to 4 cakes at once by adding 30 seconds cooking time for each additional cake. Ex: 1 cake – 1 minute, 2 cakes – 1 30 seconds, 3 cakes – 2 minutes, etc.
    .
    The cake will rise while cooking and then slightly fall when it stops.
    I popped one out of the mug so you can see what exactly it looks like in the center…
    chocolate heaven!
    The cake if fully cooked and the chocolate chunks are perfectly melted.
    Once you pull the cakes out of the microwave top with marshmallow frosting while hot.
    I used a Wilton 1M tip (available and most craft stores) and piping bag.
    Swirl frosting on top of cake to create a whipped cream look…
    Serve immediately!
    Now this is my kind of Hot Chocolate!
    The frosting slightly melts over the warm cake while you eat, sooo creamy and good!
    I hope you all enjoy this version of Hot Chocolate as much as these kids do!

    Creamy Marshmallow Frosting Recipe – make before and store in fridge until ready to use
    1 (8 oz.) package of cream cheese, softened
    1 cup confectioners’ sugar
    1 teaspoon vanilla extract
    1 (7 oz.) container of marshmallow creme
    1 (8 oz.) container frozen whipped topping , thawed
    .
    In a large bowl beat cream cheese until smooth, about 3 minutes. Add confectioners’ sugar and vanilla and beat until combined. Next add the marshmallow creme and beat until creamy, about 2 minutes, Add the whipped topping and beat until combined.
    Use immediately or store covered in fridge for up to 3 days.
