Surprise Snowball Cookie

If you haven't had surprise snowball cookies before, well you are in for a surprise! Their is a hidden chocolate kiss inside. Anything better than biting into a cookie and finding chocolate inside? This is like a shortbread cookie with the fun surprise!

Ingredients

  • 1 cup unsalted butter room temp
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 2 ¼ cups all purpose flour
  • ½ teaspoon salt
  • 32 pcs Hershey Kisses unwrapped
  • Additional powdered sugar for rolling

Instructions

  • Preheat the oven to 350°
  • Line two cookie sheets with parchment paper.
  • In a stand mixer add the butter, ½ cup powdered sugar, and vanilla.
  • Mix on medium speed, until fluffy.
  • Carefully add flour mixture 1 cup at a time, until all flour is in the mixture.
  • Mix until the dough comes together.
  • Wrap the dough in plastic wrap. Refrigerate for 30 minutes.
  • Using a small ice cream scoop, scoop balls of dough, set to the side.
  • Take 1 dough ball at a time flatten it out with your hands and place aHerhsey kiss inside.
  • Roll the dough back into a ball.
  • Place on the baking sheet.
  • Bake cookies for 8-10 minutes.
  • The bottoms should be slightly brown.
  • Remove from the oven and cool for just 5-10 minutes.
  • In a small bowl add your powdered sugar, then roll each cookie in the sugar until coated.
  • Set to the side.
