Preheat oven to 425F
Combine peppers and apricot preserves in small bowl
Cut the brie in half horizontally
Place one half of brie cut side up onto the center of a large baking stone or glass plate
Spread half the apricot mixture on top
Top with half the pecans
Place remaining brie on top (cut side up)
Spread the rest of the apricot mixture on top and top off with remaining pecans.
Bake 10-12 minutes until Brie is soft and somewhat melted.
If you choose to add sliced baguettes, slice a french baguette into ½ inch slices and brush with vegetable oil.
Add the slices of bread to the oven for 8-10 minutes being careful not to burn the bread.
