Watermelon Macarons


 

Happy Summer!

I am Alexis of Jaco’lyn Murphy Designs 

and I am so thrilled to be here.

 Nothing says Summer like watermelon

and these festive and simple treats are a great way to kick off the season.

You will need:

whole watermelon

mini chocolate chips

vanilla or any white frosting

green food coloring

circular cookie/pastry cutter

(mine was approx 2″)

Cut watermelon into about 1/2 inch slices and

using a circular cutter

make the tops and bottoms of your macarons…

Chill your watermelon circles in the refrigerator until ready to assemble,

then mix green food coloring in with frosting and

stir until you have your perfect color of green.

Add about half a spoonful of frosting to bottom of “cookie” and top,

pressing down gently to spread out the filling…

Sprinkle on your chocolate chip “seeds” and you have a

Watermelon Macaron…

I like to put them in  cupcake wrappers and back into the frig

until ready to serve…

 Who knew Summer Macarons could be so easy

and you don’t even have to turn on the oven!
